Backcountry Pad Thai

you'll need:

1/4 cup dehydrated frozen vegetable mix
40 gs rice noodles
2 tablespoons dehydrated chicken
1 tablespoon dehydrated shrimp
1 tablespoon dehydrated tofu
2 tablespoons light soy sauce
2 tablespoons lime juice
2 teaspoons brown sugar
1 tablespoon creamy peanut butter
1 teaspoon sriracha sauce
1 teaspoon rice vinegar
2 tablespoons unsalted peanuts

at home:

Combine dehydrated vegetables, chicken, shrimp, tofu and rice noodles in reusable zip-lock bag.
Mix all the  ingredients for the sauce: soy sauce, lime juice, peanut butter, sriracha, rice vinegar in a mug, then put in a small leak-proof bottle or screw-top jar.
Pack peanuts separately.

on the trail:

Put the Backcountry Pad Thai mixture into a pot and add 1 cup water.
Place the pot over medium heat and bring to a boil.
Cook for about 10 minutes stirring occasionally.
Remove from the heat.
Pour in the sauce and stir well.

notes:

For gluten-free version choose coconut aminos
